Origin of the Canarian papas locas recipe
Did you know that the Canarian papas locas are not from the Canary Islands? Actually, this dish is said to be of Latin American origin. In fact, it is eaten in several Latin American countries. It seems that, in Peru, it was already being prepared during the 1950s.
Then it spread to other parts of the world with different variations in the ingredients and it is very common to find them on the menu of different fast food restaurants, bars and beach bars.

The main ingredient of the Canarian papas locas are fried potatoes, in a fairly generous quantity, like the rest of the ingredients of this dish. What do you need to prepare it?

- Cooked chicken breast
- Chicken stock
- Cooked ham in one slide
- Salami in one piece
- Cheese in one piece
- Alioli
- Brava sauce
- Olive oil
This recipe can be prepared with meat, sausages and different types of cheese and sauces. In addition, since there are different versions, it can also be prepared with chili, mustard and oregano or with onion, pepper and bacon. Of course, always in abundant quantities.
Preparation of the Canarian papas locas
The elaboration of the Canarian papas locas recipe is very easy, although you should take your time. Follow these steps:
- Heat the chicken stock in a saucepan and boil the chicken breast in the same saucepan.
- When it is ready, remove the breast and shred the meat.
- Mix the chicken with half of the alioli and set it aside.
- Cut the cooked ham and sauté it in a frying pan with a little bit of oil.
- Cut the salami and the cheese into small cubes.
- Peel and cut the potatoes into sticks and fry them with plenty of oil. When they are ready, remove the excess of oil and season to taste.
To present this dish, put the fried potatoes as a base on a platter. Spread the shredded breast, cooked ham, salami and the cheese. Add alioli and brava sauce on top and your dish will be ready to share with friends,

The key is to make it a generous dish that can be shared as a starter. The good thing is that, if there is any ingredient that you don’t like, you can change it with another one that gives the flavour you want.
